レッドビート由来のベタレイン色素が、アルツハイマー病と関係のあるアミロイドβペプチドの凝集を抑制することを発見

　難病であるアルツハイマー病の原因の一つは、アミロイドβペプチドが凝集し、脳内に沈着・蓄積することと考えられています。本研究では、様々な分析法とモデル生物である線虫を用いて、レッドビート（根菜の一種）に含まれるベタレイン色素（ベタニン、イソベタニン）が、アミロイドβペプチドの凝集を阻害し、生物のアルツハイマー病態を緩和する可能性を明らかにしました。本研究により、レッドビート由来ベタレイン色素の食品分野や医薬品分野への利用が期待されます。

研究は、本学生物資源工学研究所 森正之准教授を中心として、今村智弘講師、東村泰希准教授、古賀博則客員教授、松本健司教授、高木宏樹准教授および北陸先端科学技術大学院大学 大木進野教授との共同で行われました。成果は、Plant Foods for Human Nutrition誌に公表されました。
