発酵食品由来の乳酸菌から新しい免疫活性化成分を発見

石川県立大学 松﨑千秋講師らは、健康飲料として親しまれている野菜発酵液の中から、粘膜免疫力を高める効果を持つ乳酸菌を見出しました。
さらにその乳酸菌の細胞壁に存在する免疫賦活成分であるリポテイコ酸は、他の乳酸菌のリポテイコ酸と比較して非常に高い活性を持ち、かつ新規な構造をした成分でした。
食品由来の新しい免疫賦活剤として、機能性食品への応用が期待されています。
石川県立大学（中島由香里研究員、東村泰希准教授）、（株）アルソア慧央グループ、札幌医科大学と共同で行われました。

専門誌「Applied and Environmental Microbiology」で4月に公開されました。
