蜂産品の品質と機能性に関する研究

　ハチミツに含まれるオリゴ糖を調べ、蜜源に含まれているオリゴ糖と比較し、考察する。また、ハチミツの香気成分についても検討を行い、オリゴ糖と同様、蜜源の香気成分と比較し、考察する。また、ローヤルゼリーについては、含まれる機能性タンパク質であるMRJP1のELISAによる迅速定量法の確立を目指す。
