各タイプの白未熟粒の外観（上）と胚乳断面の白濁の様子（下）

　近年の温暖化傾向の下、登熟期の高温により胚乳の一部が白く濁る白未熟粒の多発により、コメの等級が下がることが各地で問題となっています。胚乳の白濁はデンプン蓄積不良によるもので、登熟期の高温に加えて、炭水化物等のさまざまな栄養状態の影響を受けます。白未熟粒発生に関する生理・遺伝学的に解明し、耐性品種の育成を目指しています。
