研究テーマ　2. 葉緑体ゲノム改変レタスによるアスタキサンチンの効率生産技術の開発

（目的）抗老化や抗疲労作用等を有する赤色色素アスタキサンチンを効率生産する食用植物の作出技術の開発
（概要）海洋細菌由来のアスタキサンチン生合成酵素遺伝子（crtW, crtZ, idi）を、レタスの葉緑体ゲノムに導入し発現させることにより、本色素を高生産する葉緑体ゲノム改変（CGM）レタスを作出した。
