新たな解析手法で、乳酸菌の系統を明らかにしました

　日本酒の「山廃（やまはい）酒母」や、加賀の「かぶら寿し」「大根寿し」、野菜漬物、海外の発酵肉など、広範な食品から分離される乳酸菌としてLatilactobacillus sakei (ラティラクトバチルス・サケイ) があります。生産科学科・植物育種学研究室の高木 宏樹 准教授と、食品科学科・食品微生物学研究室の小栁 喬 准教授の研究チームは、様々な地域の食品などから分離された32株のL. sakeiの全ゲノム塩基配列から、「菌株特異的ヌクレオチド連結（strain-specific, nucleotide-concatenated: SSC）配列」を作成し、動物性原料や植物性原料といった栄養源の違いに基づいて菌株の系統が分かれることを明らかにしました。この結果は、L. sakeiを用いた様々な特徴ある食品造りに活かせる可能性があります。

本成果は、公益財団法人腸内細菌学会、日本食品免疫学会、日本乳酸菌学会の合同機関国際誌であるBioscience of Microbiota, Food and Healthの第42巻2号 (2023年) に掲載されました。
